Why your braise turned out tough (or dry, or both)
A failed braise is almost never the recipe. It's the liquid spending hours at the wrong temperature, and on a stovetop or in most ovens, you can't see it happening.
The window that matters
Collagen, the connective tissue that makes cheap cuts tough, converts to gelatin meaningfully between roughly 160°F and 185°F. Below that window, conversion is glacially slow: the meat stays tough no matter how long you wait. Above roughly 190°F, conversion is fast but muscle fibers are also squeezing out moisture faster than gelatin can compensate. That's the classic "falling apart but somehow dry" result.
Why "low and slow" goes wrong anyway
- A "gentle simmer" on the stovetop is usually 200°F+. Visible bubbling means the liquid is near boiling at the pot's bottom, well above the ideal band.
- Oven dial numbers lie. Home ovens cycle ±25°F around their setpoint, and the braising liquid lags the air temperature unpredictably.
- The pot matters. Thin pots create hot spots at the base where the liquid locally boils even while the surface looks calm.
- Lid on vs. lid off changes everything. Evaporative cooling with the lid off can drop liquid temperature 15°F+ versus lid on at the same burner setting.
How to fix it
Put a probe thermometer in the liquid, not the meat, and adjust until it reads 170–180°F. On a stovetop that usually means the lowest possible setting with the lid cracked. In an oven, 250°F air temperature typically lands the liquid in range, but verify: every oven and pot combination is different.
If you can see steady bubbles, it's too hot. A proper braise shows an occasional lazy bubble (one every few seconds) and nothing more.
