Sous vide vs. slow cooker: which one for which job
They're both "low and slow," and they're not interchangeable. The difference is control: one holds an exact temperature, the other holds an approximate power level.
How each actually works
Sous vide circulates water held at a precise setpoint (typically within a degree) so food can never overshoot its target. Slow cookers apply fixed low power to a ceramic crock; "Low" and "High" aren't temperatures, and most units eventually push contents to just below boiling and hold there.

The honest summary
Buy a slow cooker for rustic, forgiving, liquid-based dishes where 205°F is fine. Use sous vide when the target is exact: a 131°F steak or 145°F chicken breast simply cannot happen in a slow cooker. And notice the gap between them: plenty of dishes (braises, delicate sauces, beans, yogurt, confit) want precise control and open-pot convenience, and today neither tool delivers both.
